This is kind of embarrassing….but I’ve never actually made Rice Krispies before (I know, the betrayal…I should probably just give up my American citizenship and move to Australia…I hear it’s nice there…). I’ve seen them being made…and I’ve certainly eaten my fair share of both homemade and store-bought Rice Kripsies…but it’s still an elusive recipe for me (shocking, right?!).

As an aside for my non-American readers (or just people who are even more out-of-the-loop than me when it comes to Rice Krispie treats…which, by the way, is concerning if you are…) Rice Krispies treats are a popular childhood dessert made from Rice Krispies cereal, marshmallows, and butter that look like this:

Kellogg’s Brand makes the original bars; homemade is (of course) more delicious, though!

When I was thinking about a recipe to pair with my Captain Crunch Macarons at Poeme, this idea was the first thing that popped into my head…if anything, it was selfish–I’ve always been curious about making a Rice Krispie treat! So, in my captain-crunch-fueled vision, I hurried to the store and returned with a mountain of mini-marshemallows (okay, it was a couple bags…but a “mountain” just seems more dramatic and exciting…) and a box of Captain Crunch.

I was worried that the Captain Crunch would make the “krispie” more “deathly” if you know what I mean…this cereal has a knack for tearing apart your mouth to shreds without even leaving a glimmer of hope…but it’s delicious so you still eat it! Surprisingly, these bars are entirely safe to eat–and they’re even more tasty than the original! The marshmallows soften up the Captain Crunch wonderfully, leaving only a slightly crispiness that isn’t I-might-need-a-plastic-surgeon-to-reconstruct-my-mouth level.

Now, I wanted to elevate the simple, but delectable, Rice Krispie treat to new heights…so I decided on creating a drizzle topping. I’ve always thought that Captain Crunch tasted a bit like butterscotch, so I instantly went to a homemade butterscotch sauce–and it was a good idea (these bars are lip-smacking good!).

Even better, these bars can be easily varied, just use any cereal (and topping or sauce) that you’d like! My boyfriend mentioned that he loved fruity-pebbles krispies when he was younger, although he admitted these Captain Crunch ones were the best he’s had (not that he’d be biased or anything…).

Butterscotch Captain Crunch “Krispies”

Inspired by my Captain Crunch Macarons at Poeme, I’ve created a decadent spin on the classic “rice krispie” treat…Captain Crunch Cereal takes the main stage with a luscious homemade buttersctoch sauce drizzled over the top. It’s a simple, delicious recipe that’s as addictive as it is fun (and it’s addictive…I’m ashamed to say how many I can eat in one sitting…)!

Ingredients
  

For the Bars:

  • 6 tbsp butter, cubed
  • 6 cups mini-marshmallows
  • 8 cups Captain Crunch Cereal
  • 1 1/2 tsp vanilla extract

Instructions
 

To Make the Bars:

  • Grease a 9 in x 13 in baking pan. Set aside. 
  • In a large saucepan or pot, melt the butter on medium heat.
  • Once melted, add the mini-marshmallows. Stir until the marshmallows have completely melted.

  • Add Captain Crunch, mixing until combined and fully covered with the marshmallow mixture. 
  • Pour the Captain Crunch krispie combination into the greased baking pan and let cool before drizzling Butterscotch Sauce over the top.

To assemble:

  • Drizzle Butterscotch Sauce over the cooled bars. The amount you want to use is your preference (I personally like a decent amount of butterscotch surface area…it’s delicious!).

  • Cut bars into 2-inch squares (or whatever size you’d like!).

  • Eat…eat…and eat some more! You might not be able to stop, though; I’m warning you!

Notes

These bars will keep in a hermetic container at room temperature for 2-3 days (if they even last that long!). You can also freeze these bars for up to three months.
