Flavor Profile: Orange Pistachio Macarons
Two words are all that’s needed for this flavor: pistachio praline. Again, for the people in the back: PISTACHIO PRALINE!!! If you’re confused why I’m shouting and alliterating, then let me enlighten you on what praline is: caramelized, roasted nuts, ground up for you to use in any way you see fit (and potentially a drug in twelve U.S. states, including the territory of Guam…it’s so addictively fantastic!). And this macaron flavor has loads of pistachio praline, among other great things…it’s actually a dark-horse favorite at Poeme (people never seem to know what to expect from it, but love it immediately after they try it!).
The Orange Pistachio macarons at Poeme are another travel-inspired flavor; one the absolute favorite places I’ve been to is Southern Spain. It’s got beautiful, passionate music (Spanish violin is just…I can’t even describe it…look up Sarasate Caprice Basque and that’s all you need to know!); fresh, delicious food; and the most laid-back, warm environment I’ve ever been in (first of all, siesta is still very much a thing there…and breakfast doesn’t start before 11 am…I’m pretty sure Spain is a college student’s version of paradise!). Orange trees dot pathways all over Andalucía (the Spanish name for the Southern part of Spain) and flowers bloom between bright, white buildings. It’s picturesque and very Mediterranean–just like the Orange Pistachio Macarons!
Being that both oranges and pistachios are abundant along the Mediterranean coast (particularly in Spain), this flavor is like a soothing walk next to the sparkling Mediterranean sea (or a light jog, it’s got some zest to it!). Sunny, vibrant orange curd fills the center of this macaron, adding a luscious creaminess to the macaron. I make it in-house at Poeme, with fresh orange zest and juice to make the flavors exceptionally pronounced.
The outer filling is a pistachio-praline and orange buttercream; it’s fluffy, bright, and animated with a fun little crunch from the caramelized pistachio pieces (all hail praline!!!…quick few questions: is pistachio praline a religion, and can I join it?). The rich, sweet notes of pistachio blends wonderfully with bright, tangy orange flavor. This buttercream is, quite frankly, something you could eat by the shovel without even getting to the macaron (this is hypothetical…of course. I haven’t done this…ha…ha…ha…anyways, let’s move on, I’m getting hot here…).
The final flavor is a cheery yet decadent experience that will make you put on a swimsuit and head to the nearest ocean (being in Colorado, that’s going to take a while…I suppose a lake will do or even a nearby puddle…we don’t judge here!). If you can’t be on the Mediterranean coast right now, this macaron is the second-best-thing (and if you are there, on behalf of everyone reading this…we’re so, so, SO jealous and why didn’t you take us with you?!).
